Position

Sous-Chef H/F – Food & Beverage – Cuisines – Hôtel Plaza Athénée, Dorchester Collection. Contract: CDI – Full time.

Responsibilities

  • Coordinate and manage a brigade to provide exceptional guest experiences.
  • Prepare culinary dishes under the guidance of the Chef de Cuisine.
  • Control inventory, order procurement, and manage FIFO and expiry dates.
  • Maintain discipline and uphold company charters in service conduct.
  • Lead, motivate, and support the team with close management.
  • Ensure quality and hygiene standards (HACCP) are applied.
  • Oversee deliveries for quality and quantity.
  • Control food costs, minimize losses, maintain minimum stock levels.
  • Conduct stock and equipment inventories.
  • Participate in menu review and recipe analysis.
  • Act as trainer and informer for the team.
  • Maintain a positive team climate aligned with the five core values.
  • Promote the vision, values, mission, and pillars of the company.
  • Execute vertical tasks as required by the kitchen and dining services.

Qualifications

  • Minimum CAP Cuisine level; relevant training in similar establishments.
  • Motivated, punctual, meticulous.
  • Experience in a comparable position with management expectations.
  • Strong communication skills; ability to serve a French-speaking clientele.
  • Fluency in French is mandatory; English is preferred.
  • Passion, creativity, organization, and the ability to inspire teamwork.
