Sous‑Chef Cuisinier (H/F)
Breizh Café is a restaurant group guided by taste, meaning and humanity.
Mission
- Contribute to culinary production: prepare and supervise galettes and dishes, strictly following technical sheets and Maison savoir-faire.
- Coach and support kitchen teams: induction, training, animation, and skill development.
- Assist the Chef Cuisinier daily: participate in recruitment, schedule management, leave handling, and cover in absence.
- Manage stock and kitchen organization: inventory, orders, delivery control, and workspace organization.
- Coordinate smoothly with the dining room and other departments, reporting needs and issues observed.
- Ensure strict adherence to hygiene and safety standards: apply HACCP rules, audit follow‑up, LTL monitoring, and crisis procedure management.
Qualifications
- Solid mastery of professional kitchen fundamentals: rigorous application of hygiene and safety rules (HACCP) and adherence to Breizh Café technical sheets.
- Strong managerial skills: supervision, animation, training, and daily team support.
- Excellent communication and teamwork, with a proximity manager approach.
- Rigor, organization, autonomy, and high quality standards.
- Natural leadership and pedagogy to unite, motivate, and develop collaborators.
- Versatility and on‑the‑ground presence: hot, cold, deep‑cleaning, and managing unforeseen events.
- Reliability and professionalism: sense of responsibility, punctuality, and anticipation.
Organisation du travail
- Working hours according to the legal duration or contract provisions.
- Average of 7 to 8 services per week, scheduled via the dedicated tool or the hierarchical manager.
